Shifting our focus from the pockets to the topstitching, we would first like to say that, variations aside, the topstitching on these jumpsuits was remarkably consistent over the years considering the intricacy of the topstitching details and the sheer number of ENT jumpsuits constructed, and we believe this achievement deserves tremendous applause.
That said, there were quite a few topstitching errors over the show's run!
We'll present some examples here in approximate chronological order.
Right off the bat, in early publicity photos, we could see that Trip's 1" waist straps were not topstitched in the typical manner (horizontal rows ¼" apart); there appear to have been two horizontal rows of topstitching dividing the strap into thirds instead of fourths!

As you probably noticed on the collars, sleeve cuffs, leg cuffs, and waist straps, the rows of topstitching weren't always perfectly horizontal or parallel, but sometimes they were downright sloppy:

When the bluer ENT jumpsuits were introduced early in the second season, Archer's first one had two flaws.
First, there was an additional row of ¼" topstitching above the division stripe that shouldn't have been there.

Also, somebody forgot to topstitch again ¼" around his sleeve zipper/gusset:

Unfortunately, that wasn't the only time somebody forgot a row of topstitching ...
(Although, to be fair, as you're doubtless aware by now, when making one of these jumpsuits there's a lot to keep up with!)
For example, in season one, someone forgot to topstitch Archer's right chest pocket again ¼" from the top edge:

ENT, 1x10 "Fortunate Son" |
Shockingly, the ENT jumpsuit Trip wore throughout the entire third season apparently never had the ¼" topstitch below the top edge of his right chest pocket!

ENT, 3x3 "Extinction" |
|
ENT, 3x8 "Twilight" |
This included publicity photos.

The forgotten ¼" topstitch was even weirder since his uniforms from the previous and following seasons were both correct in that regard.

Another forgotten topstitch was the left chest pocket's vertical upper "expanding pocket edge stitch" on (at least?) one of Reed's ENT jumpsuits:

Reed's left chest pocket was sometimes correctly edge stitched again at the top, though.

Reed's ENT jumpsuit wasn't the only one to fall victim to that particular oversight; this guy's left chest pocket was also missing the upper "expanding pocket edge stitch."

Trip (stunt) ENT jumpsuit auction photo |
Well, the center back seams of at least two of Trip's ENT jumpsuits (one "hero," one stunt) in season four were pressed and topstitched in reverse of normal - that is, the seam allowances were pressed and topstitched to the right of the center back seam.

ENT, 4x17 "Bound" |
Apparently the Enterprise's quartermaster in the mirror universe was having an off-day and/or was in a big hurry, because (s)he didn't finish topstitching Trip's collar before he picked it up!

ENT, 4x18 "In a Mirror, Darkly (part 1)" |
(Somebody probably did some time in the agony booth for that one!)
