The third ENT jumpsuit variant wasn't so much of a "variant" as a jumpsuit obviously still in the Starfleet uniform family and closely related to the ENT jumpsuit.
This was the gray jumpsuit worn by Sim in the third season episode, "Similitude," and by Udan in the fourth season episode, "Cold Station 12."

The gray jumpsuits worn by Sim and Udan appeared to be of the same style and construction (though Udan's was most likely made specifically for him rather than a simple costume recycle).
As you can see, the "Sim jumpsuit" (as we'll be referring to it from here onward) shared many characteristics with the ENT jumpsuit:

It was, however, different enough to be an entirely separate garment (but similar enough that we've deemed it worth mention here).
We won't be spending much time on the Sim jumpsuit - just highlighting some of the similarities and differences between it and the ENT jumpsuit.
Although both jumpsuits had edge stitched and topstitched collars, the ENT jumpsuit's collar was curved in the front (mandarin collar-style), whereas the Sim jumpsuit had a straight collar, and the front zipper extended all the way up to the top of the collar.
We saw three wearing styles with this particular jumpsuit.
The first was with it zipped all the way up (including the collar):

The second was with the jumpsuit zipped up to mid-chest level with the front middle and top of the undershirt visible (a la the "normal" way the ENT jumpsuit was worn).

The third wearing style was also with the jumpsuit partially unzipped, but the collar turned downward (like a contemporary golf/polo shirt's might be).

Note that Sim got to wear the Starfleet-issue black undershirt, but Udan didn't.

Note that the Sim jumpsuit also had an additional layer of shoulder reinforcement with a two rows (columns?) of vertical topstitching where the division stripe would be on the ENT jumpsuit.
The chest pockets were similar in shape to the ENT jumpsuits', and they were also expanding pockets; the main differences were that the Sim jumpsuit's pockets were non-functional ("faux-pockets," as per the auction descriptions!) and had flaps at the top but no zippers.

The Sim jumpsuit had waist straps similar to those on the ENT jumpsuit, except rather than two 1" straps on each side, the Sim jumpsuit only had one taller (1 ½"-ish) strap on each side.

The Sim jumpsuit had a 2" back elastic waistband like that on the (men's) ENT jumpsuit.

The Sim jumpsuit also had thigh pockets similar (and similarly positioned) to those on the ENT jumpsuit, except they were symmetrical and, again, had flaps at the top but no zippers.

The Sim jumpsuit had similar sleeve and leg gussets, hems, and cuffs to the ENT jumpsuit.

Lastly, the Sim jumpsuit had the same "hero zipper pulls" as the ENT jumpsuit:

Well, at least Sim's did ... Young Sim and Udan's appeared to just have regular zipper pulls ...
